Face it, we all have our favorite food. Something you could eat each and every day. Mine happens to be Mexican food, texmex in particular. To be more specific, enchiladas. Cheese enchiladas.

I've always been a pretty darn good cook even dating way back. In my twenties I could eat in a “fancy” restaurant and figure out how to duplicate the recipe at home. But one thing eluded me for years. Yep, my favorite dish. I even thought about taking a job in a Mexican food restaurant for a week to learn the art of enchilada sauce. (that's right, I said art!)

I waited over twenty years for someone to make a sauce that would allow me to make enchiladas at home that tasted like my favorite Central Texas enchiladas, and no one ever did! Somebody had to do it so I stepped up to the plate. (so to speak) Development came slow, mainly because I was recently divorced and “broke” is not even the word I would use to describe my financial situation.
Abysmal is a better choice.

But after mucho experimentation, I came up with a blend of dry spices that anyone could add water to (and a little butter or oil) and have that heavenly gravy that makes us here in Texas the envy of the Mexican food world. You won't find a more authentic texmex enchilada sauce. Seven national awards alone for this sauce.
